1. Rinse the duck with water and put it into a pot
2. Take a small clean bowl and put in ginger, garlic, star anise and pepper, then pour in the old soy sauce and the soy sauce<
3. Pour the marinade over the duck, and spread the duck inside and out with your hands to coat evenly with the sauce
4. Continue to rub and massage for 5 minutes, place in a plastic bag, and send it to the freezer to marinate overnight
5. Remove the duck from the marinade, and place it in a cool, ventilated place to dry naturally, and while you wait, mix the honey with the vinegar and use as a crunchy water for the skin to be used
7. Remove the duck, and then brush it evenly with the crispy water and air-dry it once again
8. Wrap the duck legs in tinfoil, and then place them into the preheated oven at 220 degrees Celsius for about 20 minutes

Cooking tips
1, duck needs to be marinated in advance, the longer the marinade the more flavorful.
2, the marinade should be fully massaged so that the marinade penetrates into the duck meat.
3, after brushing the crispy water, it should be left to dry naturally before grilling, otherwise it is difficult to ensure the crispy duck skin.
4, again into the oven before the duck legs should be wrapped in tinfoil, so as not to scorch.
