Stewed chicken with lacquer oil is a traditional food loved by Lisu people in Nujiang Gorge. On holidays or the arrival of friends from afar, Lisu people will cook this dish to celebrate the festival and entertain distinguished guests. Nujiang Lisu Autonomous Prefecture is rich in lacquer trees and lacquer oil. Lacquer oil can be eaten, used as chemical raw material and used as medicine.
Slaughter a robust chicken first, remove hair, clean it and cut it into small pieces. Put100g or more of lacquer oil into the pot to melt and boil, then put the chicken into the pot to stew for five or six minutes, then sprinkle an appropriate amount of soju, add an appropriate amount of water, and stew for two or three hours with warm fire.
