Shrimp bean curd soup
Ingredients required: lactone tofu 1 box, half a catty of new prawn with knife, 2 shallots, 2 cloves of ginger 1 1 g, 2 cloves of garlic, proper amount of salt, 2 tablespoons of cooking wine and proper amount of chicken powder.
1. Cut lactone tofu into small pieces, shred ginger, and cut garlic and chives into small pieces. You must use lactone tofu here, because lactone tofu is tender and tastes better when used to make soup. Never buy brine tofu.
2. Then treat the shrimp. After washing the prawns, separate the head and tail. Don't throw your head away. It will be useful in the future.
3. Then remove the shell and shrimp line of the shrimp tail, put it in a bowl, add 6 grams of ginger and 1 tablespoon cooking wine, and mix well for later use.
4. Pour the right amount of oil into the pot, pour the minced garlic, half chopped green onion and the remaining shredded ginger into the pot, and stir-fry over low and medium heat for fragrance.
5. Next, put the shrimp head into the pot, stir-fry it over medium heat until it changes color, stir-fry it over low heat for 2-3 minutes, and then stir-fry the shrimp oil, so that the soup will be delicious.
6. Then pour in a proper amount of water and 1 tablespoon of cooking wine. If you like soup, you can add more water and boil it.
7. After the soup in the pot is boiled, skim off the white floating foam with a spoon, then remove the shrimp head and throw it away, then put the tofu and shrimp meat in the pot, add salt and chicken powder, and cook for 10 minute.
8. 10 minutes later, sprinkle the remaining chopped green onion and serve.
