Ice cream is a kind of frozen dairy products, which is a soft mixture made of milk or dairy products and sugar as the main raw materials, adding stabilizers, emulsifiers, spices and other substances, after mixing, sterilization, homogenization and freezing. Its physical structure is a complex physical and chemical system. Bubbles are dispersed in a continuous liquid with ice crystals. This liquid contains fat particles, milk protein, insoluble salts, lactose crystals, colloidal stabilizers, sucrose, lactose and soluble salts. So there is a three-phase system consisting of gas phase, liquid phase and solid phase.
