Brief introduction of Jinsha corn:

I saw this dish in Dacai's blog today. There are many salted duck eggs left at home during the Dragon Boat Festival, and I'm worried about how to spend them. So the supermarket bought a bag of quick-frozen corn kernels and practiced it. This recipe is to wrap corn kernels with dry starch, fry them in an oil pan, and then mix with salted duck egg yolk. The purpose of frying with dried starch is to make the corn kernels slightly crisp. If you think frying is unhealthy, I think you can use corn kernels directly, crushed and salted.

Materials:

Appropriate amount of quick-frozen corn kernels, starch and salted duck egg yolk.

Exercise:

1. After the quick-frozen corn kernels are thawed, they are mixed with dry starch, and then the excess starch is removed by a sieve.

2. Start a large oil pan, heat the oil, put the corn kernels wrapped in dry starch in it and fry for two or three minutes until the corn kernels are crispy with a spatula.

3. Take out the corn kernels and suck off the excess oil with kitchen paper towels.

4. Crush the cooked salted duck egg yolk with a spoon, pour out the oil in the pot, and stir fry the salted duck egg yolk with the remaining oil on the pot wall until the salted duck egg yolk begins to bubble.

5. Quickly pour in the fried corn kernels and stir fry a few times, so that the surface of the corn kernels is evenly stained with salted duck egg yolk.

Tips:

1. Put the corn kernels in the pot and fry them. Don't move them at first. When the starch outside is fried for a while, you can turn it over with a spatula, but don't turn it too hard, or the starch shell will be completely separated from the corn kernels.

2. The corn kernels are fried and there is a lot of oil on the surface. It is best to use kitchen paper towels to absorb excess grease. There are kitchen tissues in the supermarket.

3. The salted duck egg yolk I used was peeled from the cooked salted duck egg. If I use raw salted duck egg yolk, I need to add a little yellow wine and steam it in a pot before using it.

When frying salted duck egg yolk, the fire should be small, and it is easy to fry if the fire is too big. When you start bubbling, you can add corn kernels and stir fry.

The salted duck egg yolk itself is salty, so this dish doesn't need any seasoning.

6. This dish is hot, but it doesn't taste good when it's cold.
