Tip 1: blanch peanuts. You may be surprised, isn't this a mess? I've never heard that fried peanuts have to be blanched. I assure you with many years' experience as a chef that it is beneficial to do so. This is all the way to fry peanuts in restaurants. The advantage is to reduce the frying time. The boiled peanuts are not easy to paste, the particles are full and the color is good. That is, after the water is boiled, add peanuts and blanch for 20 seconds, pour out and drain before frying.
Tip 2: Oil temperature control.
The oil is not over peanuts, and the oil temperature is 30% hot. Add the boiled peanuts, turn to low heat and fry slowly, and gently push them with a spoon to make them evenly heated. As the water in peanuts evaporates, it will crack and fry for another two minutes. The color should be lighter. If the color is just right when frying, it must be overdone, because the residual temperature is still very high, which will make the peanuts burnt.
Tip 3: Listen and tell.
This is the most accurate and effective, and the hotel chef uses this trick to judge. After frying until it crackles, the right hand scoops up peanuts with a colander, and from about 20 cm above, it falls on the back of the iron spoon held in the left hand, and a crisp sound is heard, indicating that it is ok. If the sound is boring, continue to fry, using the same method, until the sound is crisp.
Take out the dish and spread it, so that the heat will dissipate quickly. When it is almost cold, just sprinkle with salt. You can't put salt too hot, it will turn into salt water, which will make peanuts soft again. You can't cool it thoroughly. Put salt on it. If you don't stick peanuts, they won't taste good.
