How to make spring cakes & four side dishes

Ingredients

Ingredients for spring cakes: 200 grams of flour, 80cc of completely boiling hot water, 20cc of cold water, a little sesame oil .

Side dish ingredients: 150g pork belly slices, 200g shredded northeastern pickled cabbage, 150g shredded beans, half of shredded red pepper, 200g mung bean sprouts, 10g chopped green onion, 50g leeks, garlic The amount of puree or 2 cloves of garlic, 1 aniseed, 1 tablespoon soy sauce, 1 teaspoon sesame oil, 1 teaspoon sugar, 1 teaspoon balsamic vinegar, a little salt, and appropriate amount of oil.

How to do it

1. Boil hot water in a pot until the water surface boils completely, then turn to low heat to keep the water boiling.

2. Pour the flour into a large container and pour hot water into it 3 or 4 times a ladle at a time.

3. Stir a few times each time before pouring in the next hot water. Turn off the heat after pouring 80cc of hot water.

4. Knead into a dough, dip your hands into the amount of cold water, sip the water into the dough to cool it down quickly, and knead it into a smooth dough while sipping. Place it on the chopping board, press it a few times with your hands to release the heat, let it cool and let it sit in a container for 15 minutes.

5. While waiting, start preparing the side dishes. Heat oil in a pot, add minced garlic or garlic slices and sauté until fragrant.

6. Pour in the shredded beans and red pepper shreds in turn and stir-fry until fragrant. Add sugar, 1/2 tablespoon of soy sauce and a little salt to taste. Stir well and serve on a plate. The vegetarian shredded beans are ready.

7. Heat oil again in a clean pot, pour in half of the pork belly slices and stir-fry out the fat, add chopped green onion and saute until fragrant.

8. Then pour in the mung bean sprouts and stir-fry for a few times. Add 1/2 tablespoon of soy sauce and 1 teaspoon of sesame oil to taste. Add the leek segments, balsamic vinegar and salt before serving. Serve on a plate. The stir-fried meat with leek and bean sprouts is ready. .

9. Heat the oil in a clean pan, stir-fry the aniseed ingredients, add the remaining pork belly slices and stir-fry until the fat is released.

10. Add the shredded sauerkraut and stir-fry until fragrant, then serve. The shredded sauerkraut is ready.

11. Divide the rested dough into small portions, spread thin flour on the chopping board, and flatten the portions.

12. Brush the regular dough thinly with sesame oil and sprinkle with a little flour (outside the amount). Each two pancakes are stacked on top of each other.

13. Use a rolling pin to press a few edges parallel to the dough to secure it.

14. Roll out into a pancake in one direction (from bottom to top or top to bottom, don't roll it back and forth repeatedly).

15. Heat a dry pan and when it is 50% hot, add a pair of pancakes.

16. Flip over low heat until cooked on one side.

17. Turn off the heat. Gently pull it with your hands, and two pancakes come out. The spring cakes are ready to serve.

18. When you lift each piece of spring cake, you can see the appearance of the cake, which is as thin as a cicada's wings. When you put it on a plate, you can also see the pattern on the plate. It can be eaten with vegetables, or you can roll up the vegetables and eat them together, which is called "biting spring" and eating spring pancakes!

Tips:

1. When kneading the spring cake dough, 80% of the water should be boiling water to make the dough soft, but the pancakes baked with hot dough will also be sticky when eaten, so 20% of the water should be used to slurp the dough, that is, use your hands. Dip the noodles in cold water.

2. Do not immediately cover the dough with a cloth and let it rest in a container. Instead, place it on the chopping board, press it several times with your hands to release the heat, cool it, and then put it in the container to rest for 15 minutes. This is also done to cool down the dough so that it tastes better!

3. Control the heat of frying spring pancakes: Heat a dry pan. When it is 50% hot (you will start to feel obvious heat when you put your hand on it), add the dough pancakes, turn to low heat and fry slowly until cooked.
