People who are more particular will choose northeast soybeans. Our family grows them at home, so we don't pay much attention to them. Choose the beans before using them, and pick away the bad ones and sand!
2. Soak soybeans
Soak the picked soybeans in clear water. In summer, soak them for three or four hours. Soaking them for too long will make them sour!
3. Boil soybeans
Boil the soybeans in a pot, and the pressure cooker is the best. If you like to eat watercress, you don't have to cook them badly!
4, drying
Take out the cooked beans, air them a little, mix them with flour, and make sure that every bean is rolled with flour.
5. Fermentation
Spread the beans on a clean cardboard box, or spread them on a clean gauze, and cover them. Pay attention to put something under the beans, and the bottom should be breathable, otherwise the beans will turn black. When the beans are covered with yellow hairs, they will be fermented. At this time, the beans should be dried in the sun, otherwise the taste will be discounted and the beans will be sticky ~
6, add salt and material package
Next, put salt and seasoning bags. If you are not sure about your own ingredients, you can go to the supermarket to buy ready-made ones. Stir well, cover the jar mouth with clean gauze and tie it, and put it in the sun. As long as it doesn't rain, just leave it outside. Stir once a day! If it rains, you have to move back. It's easy to break down in the rain! Leave it for a while, the sauce will turn red or purple-black, and it will be fine when the sauce fragrance comes out.
