Choose plum blossom meat with 3:7 ratio of fat to lean.

Put the chopped meat into a bowl, add green onion and ginger water, soy sauce, water starch in one direction and mix well, stir until the meat puree into a sticky state, put in the right amount of salt (1g or so) and continue to mix well.
