Stinky tofu can be divided into fermented stinky tofu and non-fermented stinky tofu according to different production techniques. Fermented stinky tofu is bottled stinky tofu, which is also commonly known as "Fang Qing" among the people and can be bought in large supermarkets. The fried stinky tofu of street snacks is not fermented.
Fermented stinky tofu is made from high-quality soybeans with high protein content by soaking beans, grinding, deslagging, stirring, pre-fermentation, pickling, bittern blending and post-fermentation. In this process, "good mold" will grow through natural fermentation.
