Mooncakes can be made in a microwave oven. The specific method is shown in the figure below:
1. Material preparation: 600 grams of special mooncake powder, 400 grams of inverted syrup, 150 grams of ghee, 10 grams of sour water, 15 salted egg yolks, 400 grams of wine-soaked cherry filling , 400g purple sweet potato filling, 800g bean paste filling.
2. Then sift in the special mooncake powder.
3. After the mixture is completely mixed, cover it with plastic wrap and let it rest for an hour, as shown in the picture below.
4. Soak the salted egg yolk in white wine for 1-2 hours, take it out and put it in the oven, bake for 3-5 minutes, then set it aside for later use, as shown in the picture below.
5. Then put the kneaded stuffing ball, hold the stuffing gently with your thumb, and press it downward slightly, as shown in the picture below.
6. Hold up the mooncake skin with the tiger’s mouth of the other hand, and gently apply upward force to wrap the mooncake skin evenly, as shown in the picture below.
7. After everything is wrapped, set aside. If you want to add egg yolk, just wrap the egg yolk into the filling according to the above method, and then repeat the above method to wrap it into the skin.
8. Put the wrapped dumplings into the mooncake mold, press gently and release from the mold. The force should be even, as shown in the picture below.
9. Preheat the microwave oven to 180 degrees, move the demolded mooncakes to the baking tray, spray some water, bake in the microwave for 3-5 minutes, the mooncakes will be set and the surface will be slightly yellow, then Take out and brush with a layer of egg wash, as shown in the picture below.
