Method for making peanut bean curd
Main raw materials? Peanut kernel 1 kg, starch 1 kg, flour 1 kg, salt.
Equipment and appliances? Electric mill, tofu making apparatus.
Production method: soak 1 kg peanut kernel in warm water overnight, take it out the next day, remove the red skin, add a proper amount of water, grind it with a machine, filter it with fine gauze for 2-3 times, remove the residue, and the filtered slurry is about 9 kg. Then, add 1 kg starch, 1 kg flour and a proper amount of salt (100 g), stir them together with the slurry into a paste, pour them into an iron pan, and cook and stir them with low fire until they are all white and there is no slurry. Quickly take it out and pour it on a tofu tray (about 5 cm thick), fold the tofu skin, press the cover plate, put a weight of 15 ~ 20 kg, press it for 30 minutes, and then cool it to get peanut tofu.
The technological process includes soaking peanut kernels → peeling → grinding → filtering → adding starch, flour and salt into the filtered pulp → stirring → stirring with slow fire → pouring into a bean curd plate → pressing a cover plate and a heavy object → making a finished product.
