Ingredients: 2 pig's trotters (forepaws), 2 pigskins, aniseed packet 1 piece, onion ginger, soy sauce and salt.
Aniseed package: 1 tsaoko, 1 clove, a few pieces of licorice, a little fennel and pepper, 2 star anises, a piece of cinnamon and a piece of dried tangerine peel, wrapped with gauze and tied. Or put it in a special disposable bag or seasoning box (sold in supermarkets).
Steps:
1, chop pig's trotters, cut pig's skin twice, blanch first. Then change the water, increase the package, add a little onion and ginger slices, soy sauce and bring to a boil.
2. Cook on low heat for 3 hours until the trotters are soft and rotten. Remove trotters and pigskin, and filter the soup. Spread a layer of plastic wrap on the fresh-keeping box. When the pig's trotters are slightly cold, remove the bones, shred the flesh and put them in a fresh-keeping box.
3. Pour the filtered soup. After cooling, put it in the refrigerator for 3-4 hours (overnight is better).
4. Dig out a layer of oil on the frozen trotters. Cut into pieces, add vinegar, soy sauce, green garlic, coriander and sesame oil and mix well.
Method 2 of pig's trotters jelly
Raw materials: trotters (2~4), onions, ginger slices, aniseed, cooking wine and salt.
Steps:
1, pig's trotters, washed and plucked with tweezers. Boil in a cold water pot, remove and wash away the floating foam.
2. Put it in a rice cooker, add water to the trotters, add onions, ginger slices, aniseed, cooking wine and salt (don't put too much, put a little less, add soy sauce to taste when eating), cover the pot, and cook over high heat until it is boneless.
3. When it is not hot, take out the trotters, remove the bones, and cut the meat into small pieces and lay them flat in the lunch box. Remove the onion, ginger and other seasonings from the soup and throw them away. Pour the soup into the lunch box, let it cool and put it in the refrigerator.
Before eating, scrape off the solidified oil on the surface with a spoon. Don't cut the pig's trotters into pieces, pour the seasoning mixed with minced garlic, vinegar, soy sauce, red oil, pepper oil, chopped coriander and a little sugar.
Supplement: If there is no rice cooker, you can also use ordinary pot or pressure cooker instead of stewed pig's trotters.
