1. Ingredients: duck meat, green onions, ginger, salt, allspice, Sichuan peppercorns, cooking wine.
2. Wash the duck and rinse away the blood.
3. Stir-fry salt + pepper + five-spice powder over low heat (fry until the salt turns slightly yellow).
4. Apply the fried salt to the whole body of the duck and massage it for about 10 minutes.
5. Then put the duck into a plastic bag and refrigerate it for more than 3 hours (to make the salt more flavorful).
6. Prepare a pot of brine (two large bowls of water + ginger + green onions + half a bowl of cooking wine + a spoonful of marinade), put the duck in the brine and soak it for about an hour.
7. After soaking, clean the surface of the duck and drain the water.
8. After boiling the brine, change to medium-low heat, put the duck in and cook for about 30 minutes.
9. Cut the cooked duck into pieces and put it on a plate.
