Difference between flour, wheat flour and glutinous rice flour

Flour is wheat flour, while flour and glutinous rice flour differ in shape, water solubility, feel, and viscosity.

Difference:

Shape. Flour is darker in color; while glutinous rice flour looks snow-white than flour;

Touch. Flour is rougher to the touch; while glutinous rice flour is softer to the touch;

Water solubility. Flour dough is elastic and not easily soluble in water. Glutinous rice dough is looser, and when it goes under water, it spreads out and sinks to the bottom;

Tendoniness. Flour can be mixed into dough with cold water and has a certain degree of gluten; whereas glutinous rice flour has to be mixed into dough with boiling water, and the dough is also prone to cracking, and is not as good as flour in terms of gluten;
