Operating steps:
Ingredients: hairtail.
Accessories: onion, ginger, garlic, salt, white wine, cooking wine, white pepper and broken tangerine peel.
1. Remove intestines from hairtail, wash it, and cut it into 2cm pieces with kitchen scissors.
2. Add a spoonful of salt, grab it evenly by hand, cover it with plastic wrap, and put it in the refrigerator for one night.
3. Put two pieces of ginger on it, drop a few drops of cooking wine, steam on the pot after the water boils 10 minutes or so.
Matters needing attention in frying hairtail:
1. The hairtail part should be slightly smaller, not too long.
2. Use a small fire when frying hairtail.
3. Cumin powder and Chili noodles should be added according to your own taste.
