Jitoumi, also known as Euryale ferox, is an annual aquatic herb of the genus Euryale in Nymphaeaceae. Submerged leaves are arrow-shaped or elliptic-kidney-shaped, floating leaf leathery, elliptic-kidney-shaped to round, petioles and pedicels are stout, and the flowers are purple inside, which usually bloom in July-August and bear fruit in August-September.
