Main ingredients: pig's feet, peanuts
Seasonings: onion, ginger, garlic, soy sauce, cooking wine, spices (one star anise, one cinnamon, bay leaves one, one tangerine peel), sugar
Method
1. Soak the peanuts for three hours or more, do not remove the peanut coating
2. Wash the pig feet Clean, blanch ginger slices and green onions in boiling water to remove blood and odor, remove and set aside
3. Heat a pan, put a spoonful of sugar in the oil, and cook over medium heat until the sugar turns brown. When brown, put down the pig's feet and stir-fry. Coat them with sugar, then add minced garlic, shredded ginger, and green onions and stir-fry until fragrant
4 Prepare a pressure cooker, add spices and garlic granules into the pot, and then stir-fry. Put the pig's feet into the pressure cooker, pour in water, soy sauce, cooking wine, and sugar until the pig's feet are almost submerged. Finally, pour in the peanuts, cover the pot, and cook until it steams for 20 minutes.
5. Prepare a casserole. After the pressure cooker has finished steaming, simmer for another 10 minutes. Open the pressure cooker and pour all the pig's feet into the casserole. Cover and simmer for more than half an hour.
