The method and formula of solid eggs are as follows:
Materials: eggs, edible alkali, water, cucumber.
Tools: scissors, bowl, steamer, egg beater, chopsticks, colander, plastic wrap, steamer basket, knife.
1. Gently crack the top edge of the egg, then use scissors to cut out a round opening, pour the egg into a bowl, and save the eggshell.
2. Prepare 2 grams of edible alkali, add 20 grams of water, and stir until the edible alkali melts.
3. Mix the alkaline water and egg liquid, beat in one direction with an egg beater until even, and slowly you can see that the egg liquid in the bowl turns dark yellow.
4. Strain the stirred egg liquid and filter out the egg white, foam and broken egg skin that are inevitably mixed in.
5. Trim the opening of the egg shell neatly, put the egg liquid into it, fill each egg shell 8 minutes full, and then cover the surface with plastic wrap to avoid water entering during the steaming process. Put into pot and steam over low heat for 30 minutes. Under the egg, you can cut the cucumber into sections and dig out the core to make a small hollow base. Place the egg on it and it will stand firm.
6. Wait quietly for 30 minutes before it is ready.
