Steps
1. Prepare the materials.
2. Cut green onions, shredded ginger and garlic cloves.
3. Wash the tofu and cut it into small pieces.
4. Adjust the water starch in advance. (The amount of starch is about 2 tablespoons.)
5. In another clean bowl, add salt, sugar, pepper, cooking wine, straw mushroom dark soy sauce, and appropriate amount of chicken essence.
6. Add water to the pot and bring it to a boil. Add a little salt (2g), then add the cut tofu and cook. After the water in the pot boils again, continue to cook for about 20 seconds and remove. Control dry moisture.
7. Pour a little oil into the pot and sauté the shredded ginger and garlic cloves.
8. Add the drained tofu and stir-fry briefly.
9. Pour in the sauce prepared in the fifth step, and gently turn the tofu to make it evenly colored.
10. Turn up the heat and cook for about half a minute. Pour in water and starch.

Tips
1. After blanching the tofu, it will have a more delicate texture and will not break easily during the subsequent stir-frying.
2. Because tofu contains more purines, gout patients with abnormal purine metabolism and patients with increased blood uric acid concentration should not eat tofu; those with spleen and stomach deficiency and cold, frequent diarrhea and loose stools should not eat tofu.
