Raw materials: one pork knuckle (650g), 30g of Astragalus membranaceus, 0/0g of Angelica sinensis/kloc, 3 red dates (big 5 small ones), 3-5 slices of ginger, 30ml of yellow rice wine, and appropriate amount of salt and pepper.
Exercise:
1. Wash pig's trotters, cut into pieces, add 10 ml yellow rice wine, cook for10min, and immediately put them into cold water for supercooling when taking them out. This step is mainly to remove impurities and fishy smell, and supercooling the river is for chewy trotters.
2. Add water to the electric pressure cooker instead of trotters, add all seasonings except salt, add 20 ml of yellow wine, and block the pot with trotters. I was really lazy today, so I used a pressure cooker to save time. Usually simmer in a soup pot for an hour. Do not open the pressure valve after stewing, let it decompress naturally, then open the salt, do not pressurize again, and continue stewing for 5 minutes.
