1.The net material will remove impurities such as sand and soil from the soybeans of the current year and wash them with water.
2. Crushing The screened, picked and scoured soybeans are crushed by a crusher, and the skin of the soybeans is removed or broken into two petals.
3. Soak the broken soybeans, wash them with clear water once or twice, remove the skin of the soybeans, put them in warm water at 25℃ and soak them for about 4 hours. Until you can crush the watercress with your fingers.
4. Grinding the soaked and broken soybeans, and then grinding them with a refiner, adding water while grinding. The amount of water added is four times that of soybeans. Generally, it can be ground twice, but it should not be too fine, so it is advisable to twist it into small particles with your fingers.
5. The soybean milk filtered and ground with water is separated from soybean milk by a separator, and the filter basket in the separator is 80-90 meshes.
6. Boil the filtered soybean milk with steam, and the heating temperature is generally controlled at about 93℃. When boiling the pulp, the air pressure should be sufficient and the air should be fed quickly.
7. Take the skin and pour the cooked soybean milk into the pan. Generally, the pan is 2m long,1.5m wide and15cm high. It is divided into 6 squares with small wooden strips, and a heating duct is installed under the pan to keep the temperature at the bottom of the pan at 70-90℃. Put the soybean milk into the pan for about 3-5 minutes. The surface of soybean milk begins to crust, and when the skin appears small wrinkles, the skin can be taken out. Repeatedly, the bean curd skin formed in each small square of the pan is taken out in turn, and the bean curd skin can be taken continuously for more than ten times in one pot of soybean milk.
8. Drying Hang the wet tofu skin taken out of the pot in the drying room for drying. One end of the drying room is equipped with a heating pipe, and the other end is equipped with a fan, so that cold air can be turned into hot air through the heating pipe, and then comes out of the exhaust pipe to quickly dry wet tofu skin. After drying, it can be packaged, stored and sold. For wet tofu skin, do not dry it outdoors to avoid crispness.
