Cooking fume refers to oils, organic substances and products of thermal decomposition or pyrolysis that are volatilized in the process of cooking and processing food, collectively referred to as cooking fume. 2. The definition of a city is the same as that in the Urban Planning Law of People's Republic of China (PRC), that is, municipalities directly under the central government, cities and towns established by the state in accordance with the administrative system. The catering industry is located in the same building and belongs to the same legal person. All smoke exhaust stoves are counted as a catering industry unit. 4. Unorganized emission of lampblack, no lampblack purification facilities. 5. The removal efficiency of lampblack refers to the percentage of lampblack treated by purification facilities and lampblack before purification.
