How to make Tianfu Sauce Elbows
Ingredients for making Tianfu Sauce Elbows:
Main ingredients: 1000 grams of pork knuckles
Seasoning: 5 grams of star anise, 3 grams of cinnamon, 5 grams of Sichuan peppercorns, 4 grams of ginger, 15 grams of coarse salt, 5 grams of rice wine, 10 grams of sugar color
How to make Tianfu sauce elbows:
1. Wash the pork knuckles;
2. Put the cleaned pork knuckles into the pot together with star anise, salt, ginger, cinnamon, pepper, sugar color and rice wine. Cook over high heat until the oil comes out, take it out and wash it with clean water;
3. Skim off the floating oil in the soup, and filter the debris at the bottom of the pot with a fine basket;
4. Pour the filtered soup back into the pot, add the washed elbows, bring to a boil over high heat, then turn to medium heat and continue to cook for about 4 hours, then turn to low heat and simmer for 1 hour;
