Both hot and cold water is acceptable.
It depends on whether you use cold water or warm water.
Normally when I want to fry rice noodles, I don’t care about the soaking time, as long as it becomes soft.
If I use cold water, I will soak it in advance. Anyway, it will be no problem to soak it for a few hours, and it will not be damaged after soaking.
If you are using rice noodles, soak them in cold water the night before. It is best to use precipitated water, such as well water. It is better if you don’t use bleaching powder. If not, just add tap water and let it soak for a few hours. Powder, it's not easy to break.
If the rice noodles are very fine, there is no need to soak them more than ten hours in advance. Just four or five hours in advance. Use some warm water, about 30 degrees, not too long. When the weather is hot, the soaking time should be shorter.
1. Home-style fried rice noodles
1. Soak the rice noodles in warm water until soft (about five minutes), drain the water and set aside.
2. Add a small amount of cooking oil, first add the eggs and stir-fry. After the eggs are cooked, add the cut ham and carrots and stir-fry.
3. When stir-frying is almost done, add the soaked rice noodles into the pot and stir-fry, then add salt and Korean chili sauce to taste. After frying, add the green onions at the end.
