Icelandic red fish green beans puree seasonal vegetables

1. Cut the finger carrots in half and the yellow knuckleheads in strips from the seasonal vegetable packet.
2. Fill a pot with water, add 1 tsp salt and turn on the heat to bring the water to a boil. When the water boils, add all the vegetables in the seasonal vegetable packet and cook for 1 minute, drain and remove from the water. Drain the water and set aside.
3. Spread the red fish flat and sprinkle salt and white pepper on both sides. Roll up the fish and tie it with the shallots and secure it with a knot.
4. Heat 2/3 of the olive oil in a pan, add the fish rolls and reduce the heat to low. Fry the fish until golden brown on all sides (about 5 minutes), pour half of the white wine over the rolls and cook until the alcohol evaporates, then remove from the heat and set aside.
5. Add the rest of the olive oil to the pan, turn on the heat, add the blanched vegetables and sauté over medium heat. Stir-fry until the white cauliflower takes on color, add the remaining white wine, cook until the alcohol evaporates, add 1 tsp salt and 1 tsp white pepper and stir-fry well.
6. Microwave the green bean puree with the bag in the microwave on medium heat for 1 minute, tear open the package and pour into the prepared dish. Serve the red fish, seasonal vegetables and green bean puree as you like.
