Tools/raw materials: pork belly 10 kg, liquor 100 g, 3 tablespoons of sugar, half a bag of salt, 200ml of five-flavor wine, and 2 tablespoons of soy sauce.
1. Prepare pork belly. I have prepared 15 kg here. I don't need to wash it. Cut into strips, about 3 to 5 cm wide. Add100g liquor, 3 tablespoons sugar, and half a bag of salt, and mix well by hand. Be sure to stir it several times, grab it and grab it evenly.
2. After stirring evenly, put the pork belly into a deep dish, add a little white wine to the surface, flatten the meat slightly, and then marinate for 36 hours.
3. After the meat is marinated, prepare some cotton thread, insert a hole in one end of the meat with chopsticks, and then take a cotton thread through it. The length of the line can be hung up.
4. After putting all the meat on cotton thread, hang the meat in the air outlet or bask in the sun for a day. One day is enough. Don't be too dry.
5. After a day in the sun, take off the pork belly and prepare a bottle of five-flavor wine. These five flavors of wine are our Hakka secret spices. It is made by grinding star anise, cinnamon, fragrant leaves, fennel and clove into powder and soaking them in high-concentration liquor for several months. Every year, I make a big bottle in advance, and use it when making bacon and braised pork in Chinese New Year. You can go to the drugstore to mix five flavors of powder. If you like.
6. Pour 200ml of spiced wine into a hot pot, add two spoonfuls of soy sauce, heat it, turn off the heat, and soak the pork belly piece by piece. This can be colored and seasoned, and it tastes particularly fragrant.
7. Put the soaked meat back on the plate, pour the remaining juice on the meat, then marinate it for one night and take it to the sun the next day.
8. Marinated meat, and then hang it to dry for about a week. This is air-dried bacon. Be sure to watch the weather forecast before cooking, make sure the weather is good, and cook with the north wind, otherwise the meat will go bad.
9. In this way, the bacon is ready. If you don't want the bacon to be too dry, you can take it down early and freeze it in the refrigerator. Stir-fried or stewed rice is especially fragrant.
