How to clean bacon:
Step one: Dry dusting
Because it is smoked with firewood, it is hung in places where the smoke is concentrated. Bacon will be stained with a lot of dust, which are small particles of firewood dust that has not been completely burned. Please use a dry brush to brush the skin before burning it.
Step 2: Fire-roasted skin
Take the whole piece of smoked bacon and bake it directly on the fire. Be careful to only grill the side with the skin and bake until the bacon is cooked. The skin of the meat turns black and begins to drip oil.
Step 3: Scrape the bacon skin

Step 4: Soak in hot rice washing water or hot water
Soak in heated rice washing water or warm water for 20 minutes. Rice water contains starch, which can absorb some of the oil. There is no need to boil the rice washing water. Once it is hot enough to feel slightly hot, you can turn off the heat and put the bacon in.
Step 5: Scrape and wash
After soaking, use a knife to scrape off the remaining dirt on the meat skin, and then rinse the bacon with clean water. Repeat cleaning several times.
Step 6: Boiling
Cut the bacon into large pieces and cook in boiling water for 20 to 30 minutes. The cooked bacon has become very clean, and the smoky and salty smell has also been reduced a lot. After taking it out and letting it cool, you can change it into the shape you like, stir-fry or steam it, it's up to you.
