Shingen mochi is a traditional snack in Japan. It is made into soft rice cakes with glutinous rice flour and then dipped in soybean flour. Recently, a Japanese confectionery shop used agar agar instead of glutinous rice flour to create "Mizu Shingen Mochi" that is as transparent as a crystal ball. It has become extremely popular since it went on sale on June 1. In fact, if you buy a set of spherical ice tray molds online, you can use agar, white jelly, ice powder, or even gelatine and jelly powder to make Shuixinxuan cake. [1] Mizu Shingen Mochi is only sold from June to September. It is made from water from the Akaishi Mountains in Japan. It has a natural sweetness and must be eaten within thirty minutes because it will melt if it exceeds time. People who have tried it say that the Shuixinxuan cake tastes like it melts in your mouth!
