New Year's cake dumplings are a famous specialty snack in Cixi. The organic rice and glutinous rice of farmers exude the flavor of New Year in the steamer, and they are put into the new year's cake forming machine through the wooden stick in the hand of the master. The new year's cake ball that slips out of the tube looks like a long white snake. Pickled vegetables, shepherd's purse and dried radish are stir-fried with shredded pork, embedded in warm and soft glutinous rice cakes, and then kneaded into the shape of jiaozi.
Production method of rice cake dumplings: 1, roll the fist-sized cooked rice cake into a thicker dough with a rolling pin. 2. Fill it with stuffing (traditionally, there are dried shepherd's purse stuffing, diced pickled bamboo shoots stuffing, white sugar sesame stuffing, mustard tuber stuffing and kohlrabi stuffing). 3. Just wrap the stuffing like jiaozi.
