After the outbreak of War of Resistance against Japanese Aggression, planes often bombed the golden waterway of the Yangtze River. Running a boat was both hard and unsafe. After some consideration, Ni Jincai chose the catering industry. Ni Jincai left Swire Steamship Company in 1940. Since February 194 1, he started a "Sanliujiu Restaurant" in Xinmen, Chongqing, and later changed its name to "Small World Snack Shop" and arrived at 1945/kloc. According to many years' experience in sailing, Ni Jincai decided to settle in Hankou, a good place to make money. In May 1946, he chose a relatively prosperous area of Dazhi Road on Zhongshan Avenue, and built a simple house on the foundation of the now Wufangzhai, which is right next to a famous stage. Then he applied for the approval of the old Hankou municipal government to create it. Its business name was "Shanghai Wufangzhai" (it was built in the eighth year of Xianfeng in the Qing Dynasty)

At the beginning of his business, Ni Jincai hired 18 fellow villagers from Jiangsu and Zhejiang, mainly engaged in traditional snacks such as glutinous rice balls, zongzi, cakes and Yangchun noodles.
