When you buy a coconut, ask the shopkeeper to peel off part of the shell on the top, so that it will be more convenient to make it yourself when you get home. Use a sharp knife to make a slit in the top of the coconut. Big enough to fit a mudskipper inside.
Prepare a clean bowl and pour some coconut juice out. Then stuff the fish and ginger slices into the coconut. Pay attention to whether the coconut water is overflowing. If the water is not full, pour back the coconut water that was poured out in advance. Then cover it with the coconut you just cut out. If the incision was not done well just now, you can cut a piece of ginger of the same size instead.
