Pot and oil are very important
1, the bottom of the pot and the oil should be hot enough, but the oil does not necessarily need too much. Close to the bottom of the pot with your palm, feel hot air, or smoke slightly from the oil surface at the bottom of the pot, then you can fry things.
2, you can use ginger to wipe the pot first, effectively solving the problem of tofu sticking to the pot.
3, the pot should be cleaned, and any dirt will become an attachment point, which will lead to the breaking of the pot and tofu.
4. It is best not to use a deformed pot. For example, if there is a bulge somewhere in the middle, it will also lead to oil pollution near the bulge, which will cause the pot to stick to the pot.
5, put more oil, put some salt in the oil, so that the oil will not spill out.
The frying method is very important.
1, fire should not be big, medium fire is best, especially when frying, don't overdo it.
2. Put the tofu into the pot piece by piece along the edge of the pot, let the tofu slide into the pot naturally, and don't pour the tofu directly into the pot, which may leak oil and break the tofu.
3. When cooking, gently shake the pot handle from time to time to avoid sticking to the pot. Don't move the tofu with a shovel, because you are afraid that it will stick to the pot and may break the tofu.
It is very important to grasp the time of speculation. Tofu will be fried to a scorched skin, and then it won't touch the bottom at all. If you are not sure, you can gently push the edge of tofu slices with your hands. If you feel a little relaxed, you can turn over. On the other hand, if the pot is still stuck at the bottom, don't move any more and continue to fry for a while.
Tip: If you want to fry tofu delicious, it is very important to choose the strength of the heat. If the fire is too small, you can avoid frying the surface of tofu too burnt, but because of the small firepower and long frying time, the tofu inside will be too old; If the fire is too big, it is easy to fry to the outer layer, and the tofu inside is not cooked yet.
