Steamed Fish Head with Diced Hot Red Peppers
1. Split the fish head, remove the fins, and evenly sprinkle salt on both sides of the split fish head for pickling 10 minute.
2. Cut the red pepper into large pieces, peel the ginger and cut it into Jiang Mo. Leave only the scallion and cut it into chopped green onion. 3. Put Jiang Mo, chopped green onion and minced garlic into the chopped pepper sauce in turn, then pour in10g of edible oil, stir evenly, sprinkle chicken essence on the marinated fish head, pour in soy sauce, cooking wine and oyster sauce, and spread evenly, pour the prepared chopped pepper sauce evenly on the fish head, and place the sliced red pepper around the fish head.
4. Put the fish head together with the plate into the pot and steam it on high fire 15 minutes, and sprinkle the chopped coriander on the steamed fish head.
5. Bring the oil to the boil, and pour the hot oil on the steamed fish head to stimulate the fragrance, so that the chopped pepper fish head is ready.
Two-color fish head with chopped pepper
1. Wash the bought fish heads and split them for later use.
2. Put a few slices of ginger in the bottom of the plate, put the fish head in the plate, add cooking wine and marinate for 20 minutes.
3. Pour in a little steamed fish soy sauce, which can be adjusted according to your own taste.
4. Spread chopped peppers with two colors on the fish head.
5. Put it in a steamer, cover it, and steam over high fire for about 10 minute.
6. Sprinkle chopped green onion, cover and steam for about 1 min, and then serve.
Salmon head with chopped pepper
1. Remove gills from salmon head, wash and dry water for later use.

3. Marinate with ginger cooking wine for 30 minutes.
4. Put the marinade in the bottom of the plate, cover the fish head, and evenly spread the chopped pepper on the fish head.
5. Steam for 10 minute, then steam for 8 minutes, and finally pour hot oil on it to eat.
