1. Steamed tofu with minced pork and black beans. One box of lactone tofu, take out and cut a slice vertically, then horizontally, then put into a deep bowl. Heat the pan and cool the oil, add minced ginger and minced green onion and stir-fry over low heat until fragrant, then pour in the minced pork and stir-fry until browned. Add a little light soy sauce, light soy sauce, and stir-fry to bring out the flavor of the sauce. Add black beans and stir fry. Pour the stir-fried minced pork on top of the tofu, put boiling water on the pot, and steam over high heat for 15 minutes. Sprinkle some chopped scallions out of the pot and you're done.
2, soy sauce beef. Beef tendon meat cut in half, soak in cool water for an hour, remove excess blood inside. Drain the beef, add salt, soy sauce, soy sauce, soybean paste, cooking wine and scratch well, cover tightly and put in the refrigerator for a day, so that the beef is fully flavored. Wash the marinated beef with water to clean the surface. Place the beef in a casserole dish, add water to cover the beef and bring to a boil over high heat, then skim the foam from the surface. Add the dried chili peppers, green onions, ginger, star anise, cinnamon, allspice, nutmeg, peppercorns and cumin. Add 2 tablespoons of salt, 1 tablespoon of dark soy sauce, 1 tablespoon of soy sauce, boil over high heat and then turn down the heat to simmer for an hour. Beef stewed, turn off the heat and then soak for two hours.
3, grilled chicken wings. Chicken wings in the water soaked for an hour to deodorize. Wash and cut flower knife on both sides to facilitate the flavor. Add soy sauce, soy sauce, oyster sauce, salt, sugar, green onion, ginger, cooking wine, pepper and mix well, marinate for 20 minutes.
