Ingredients: 4 duck legs, 15 grams of green onions, 10 grams of ginger, 5 cloves of garlic, 4 grams of salt, 3 grams of chicken essence, 5 grams of sugar, 10 grams of soy sauce, 20 grams of cooking wine, 5 grams of fish sauce , appropriate amount of sesame oil and some cooking oil.
Preparation:
1. Wash the duck legs and chop them into pieces for later use.
2. Cut green onion into sections, slice ginger, and whole garlic for later use.
3. Take a large bowl and marinate the duck legs with onions, ginger, garlic, chicken essence, soy sauce, cooking wine, and fish sauce for 30 minutes.
4. Make base oil in the pot. When 60% hot, add duck legs and marinade and stir-fry until fragrant.
5. Pour in warm water until the duck legs are submerged.
6. Skim off the foam after the fire is turned on.
7. Reduce the heat and simmer for about 40 minutes.
8. Add salt and sugar to taste and cook for 20 minutes until the duck legs are tender.
9. Turn on high heat and reduce the sauce until the soup is wrapped around the duck meat.
10. Add some sesame oil and serve.
Tips:
1. Stew the duck legs in warm water after stir-frying, which will make the duck meat softer and more tender.
2. Add salt afterwards to prevent the duck meat from tightening during the cooking process and affecting the taste.
