Ingredients: bean sprouts, duck blood, beef, tripe, thousand pages of tofu, raw flour, dried red pepper, pepper, cooked white sesame, chives, garlic cloves, salt, Pixian bean paste, thick soup treasure, soy sauce and cooking wine.
Practice steps:
Step 1: blanch the soybean sprouts and spread them at the bottom of the big bowl.
Step 2: Slice beef (not too thin), add salt 1g, cornmeal, soy sauce, and marinate with cooking wine 10min.
Step 3, cut the duck blood and beef venetian into small pieces and blanch them separately for later use.
Step 4: Mince Pixian bean paste, slice thousands of pages of tofu, and cut dried peppers into small pieces.
Step 5, put oil in the wok, stir-fry the marinated beef and take it out for later use.
Step 6, put oil in another pot, add bean paste and stir-fry red oil.
Step 7: Add three bowls of water (about 800 grams), add thick soup treasure, put half of dried red pepper into the pot, and set aside the rest.
Step 8: After the soup is boiled, add duck blood, beef leaves and cook for three minutes.
Step 9: Put a thousand pages of tofu in the pot and cook for five or six minutes. You can taste the soup with salt according to your own taste.
Step 10: Don't be idle while the pot is cooking. Chop garlic, and put it into the rice bowl with the remaining semi-dried red pepper, pepper and cooked white sesame.
Step 1 1: after cooking, pour it into the king with bean sprouts, pile a little chopped green onion in the middle, and it will look good after a little tidying.
Step 12: Wash the wok, pour in half a bowl of oil, burn until it smokes, and add the pepper while it is hot, which is fragrant. Then wrap the bowl with a rag and pour it from the chopped green onion in the middle.
Step 13, almost. Sprinkle some chopped green onion on the surface to decorate it.
Tips:
This is a simplified version. I have eaten enough at home. If I want to add eel, squid and ham, I will cook it myself slowly.
