If it is fresh bamboo shoots, wrap them in the outer skin, cut off the old part near the roots with a knife, and eat the core inside. Cut the bamboo shoot cores into shreds and boil them in boiling water. Drain the water and stir-fry them with some shredded pork. It’s delicious! If it is dried bamboo shoots, soak them in water for about a week until they are soft, but change the water every day. Eat the same way as above. Give it a try!
