raw material
1 root yam,100g blueberry jam.
ingredients
100ml clear water; 50 grams of rock sugar; 100ml light cream; Salt 1/4 teaspoon (1 g).
Method one
1, wash away the outer soil of yam, put on rubber gloves for the kitchen, and scrape off the skin of yam with a scraper. Then clean it with water. There is a layer of white and transparent mucus on yam meat, which will be very itchy if it touches the skin. Therefore, when peeling and washing yam, you must remember to bring kitchen rubber gloves. After the yam is steamed, don't worry.
2. Pour water into the steamer. After the fire is boiled, add the yam cut into sections and steam for 20 minutes with high fire until the yam becomes soft. The varieties of yam will vary from place to place. When buying, remember to ask the staff in the supermarket or the vendors in the vegetable market which yam is soft in taste. There is a kind of yam that is crispy and not suitable for this dish.
3. Pour clear water into a small pot, add blueberry jam and rock sugar, boil over high fire, and continue to boil over low fire until the blueberry jam and clear water become sticky, then pour out and cool. Blueberry jam will taste better after it is diluted with water and boiled with rock sugar or honey. It is not recommended to pour blueberry jam on it directly. The color is too dark and too sticky, which will form a black pile and not look good.
4. After the yam is steamed, poke it with chopsticks. If there is no hard core in the middle, you can easily take it out and cool it a little. When yam is warm, put it on the chopping board, crush it with a knife first, then put it in a bowl and press it into a more delicate mud with a spoon, without caking.
5. Add salt and whipped cream to the yam mud and mix well. Put the piping mouth into the piping bag, then put the yam mud into it, and then squeeze it into the cup. Finally, drizzle with blueberry sauce.
Should be adjusted according to individual requirements.
