Materials for Braised Spare Ribs
Spare Ribs 400g Water 400ml Rock Sugar 15g Oil 1 tbsp Scallions 2 Ginger 5 Cinnamon 2 small pieces 8g Star Anise 2 Fine Salt 1/2 tsp Soy Sauce 1 tbsp Flower Diao Wine 1 tbsp
Steps for Braised Spare Ribs
Step 1
Pot of boiling water, put in the chopped spare ribs and blanch until the blood runs out. Step 2
Put 1 tbsp of oil in the pot and cook the rock sugar over low heat until it turns a deep brown color
Step 3
Add the pork ribs and stir-fry them until they are evenly browned
Step 4
Fill a pot with 400 ml of water (just enough to cover the pork ribs) and add all the spices
Step 5
Add the pork ribs to the pot and stir-fry until they are evenly browned.
Bring to a boil over high heat, transfer the ribs with the stock to a deep skillet, cover and simmer over low heat for 60 minutes
Step 6
Cook until about 1/3 of the water is left, then remove the cinnamon, ginger, green onion and star anise from the pot
Step 7
Continue to cook the ribs until the ribs can be inserted into the pan with chopsticks easily
Step 8
Turn up the heat and cook until lightly simmering, adding all the seasonings.
