Drinking tea is inseparable from tea sets. Tea sets refer to special utensils for brewing tea, including pots, bowls, cups, plates, trays, etc. Another important manifestation of the ancient people's emphasis on the way of drinking tea is that they attach great importance to it. The art of tea sets itself, a set of exquisite tea sets complements each other with the color, aroma and taste of famous tea. With the rise of tea drinking and the evolution of tea drinking customs in various eras, there are more and more varieties of tea sets with more and more exquisite textures. Chaoshan Kung Fu Tea requires at least ten kinds of tea sets, which are:
First: Teapot
——The Chaozhou dialect is called "Chong Guan", and some are also called "Su Can" , because it comes from Yixing, Jiangsu, and is the smallest type of Yixing purple clay teapot. There are four-character criteria for choosing a teapot, which are: "small, shallow, neat, and old." Teapots are divided into two-person pots, three-person pots, four-person pots, and four-person pots. Mengchen, Tiehuaxuan, etc. , Qiupu, Calyx Garden, Xiaoshan, Yuan Xisheng and others are the most cherished. There are many styles of pots, including ones as small as oranges, as large as tangerines, melon-shaped, persimmon-shaped, rhombus-shaped, drum-shaped, plum-shaped... and so on. Generally, they are drum-shaped, which is why they are upright and thick. There are also many colors of pots, such as cinnabar, ancient iron maroon, purple clay, stone yellow, azure...etc. But regardless of style or color, the most important thing is that "the pot should be small rather than large, shallow rather than deep." Because there is no need for "hard work".
Second: Teacup
——There are also four-character rules for choosing a teacup: small, shallow, thin, and white. If it is small, it will be drained in one sip; if it is shallow, no water will be left behind; if it is as white as jade, it will bring out the color of the tea; if it is as thin as paper, it will be fragrant. Chaozhou tea drinkers often regard the "ruo deep cup" with the words "ruo deep treasure" written on the bottom as "ruo deep cup" with a white ground and blue flower base as a flat mouth, as a precious one, but it is no longer easy to get. The small white porcelain cups produced in Jingdezhen, Jiangxi and Fengxi, Chaozhou are also very good and are commonly known as "Ginkgo cups".
Third: Tea Wash
——Shaped like a big bowl, with many shades and colors. Three are necessary for cooking Kung Fu tea, one is the main one and two are for soaking the tea cup. One is used to soak the pot, and the other is used to hold the water for washing the cup and the soaked tea leaves.
Fourth: Tea Tray
——Tea tray is used to hold tea cups, and there are various styles, such as full moon shape, checkerboard shape...etc. But no matter what style, the most important thing is the four-character formula: wide, flat, light, and white. That is, the plate should be wide so that more cups can be placed according to the number of guests; the bottom of the plate should be flat so that the teacup will not be unstable and easy to shake; the edges should be light and the color should be white, all of which are to set off the teacup and teapot. , to make it beautiful.
Fifth: Tea mat
——Smaller than the tea tray, it is used to hold the tea cans. There are also various styles, but in short, you should pay attention to the "light in summer and deep in winter". In order to make it easier to fill the pot with more boiling water when pouring the tea in the deep winter, so that the tea will not get cold easily, a layer of "mat" is placed in the tea mat. The "tea mat" is made of loofah and is fried into the shape of the tea mat. Therefore, it is necessary to use a loofah instead of a cloth felt. In order to avoid odor, the function of the felt is to protect the teapot. After spilling the tea in Gongfu tea, the teapot should be turned upside down to prevent water from accumulating in the pot. A little bit of water will also It will make the tea taste bitter because the tannins are dissolved.
Sixth: Water bottles and water bowls
- have the same function, they are both used to store water for making tea. A water bottle with a slim neck and drooping shoulders, a flat bottom, a handle, and plain blue and white porcelain is the best. There is also a type with a tied neck and a mouth, decorated with a chilong, and the one called Chilong Zun is also good. Water bowls are also used to store water for making tea. They are the same size as an ordinary flowerpot and come in many styles. The "red gold color" made in the Ming Dynasty uses metal glaze to depict two goldfish tails on the bottom of the bowl. When the water is scooped out, the water moves, as if the goldfish are also moving. This is a rare treasure.
Seventh: Dragon Urn
——The large dragon vat is similar to the lotus vat used to plant lotus in the garden, or it may be smaller. It is used to store a large amount of spring water. It is covered tightly and supported by a wooden table. It is placed in a corner of the study and looks antique. The dragon vat is also made of plain blue and white porcelain. It was made in the Xuande year of the Ming Dynasty, but it is rare to see it.
Eighth: Red clay small stove
——Red clay small stove is made in Chao'an, Chaoyang and Jieyang, and the style is very beautiful. There are also various forms, which are characterized by long shape, six or seven inches high, and a deep and small furnace core where the charcoal is placed, so as to make the fire even and save charcoal. The small furnace has a cover and a door, which can be covered and closed when not in use. It is both economical and convenient. There is often an elegant couplet beside the door of the small stove, which further adds to the excitement of tea.
Ninth: Sand Crusher
——"Sand Crusher", the most famous one made by Fengxi in Chao'an, commonly known as "tea pot", is made of sand and mud, and is very It is lightweight and once the water boils, the small lid will automatically lift and make a burst of sound. The water at this time is just right for making tea. As for using steel pots or aluminum pots to boil water and make tea, it is okay, but metal things are a little worse for boiling water and making tea, not counting the time required.
Tenth: Feather Fan and Steel Chopsticks
——Lume fans are used to fan the fire. When fanning the fire, you must use force, but you must not fan it past the left and right sides of the furnace door, so that it can be kept constant. The heat also shows respect for the guests. Therefore, the special feather fan is not only conducive to the display of "Kung Fu", but also a fan made of pure white goose feathers, with a large surface that stretches over the palm, and the elegant bamboo handle and silk tassels, setting off the red, green, white... tea sets of various colors. , coupled with the golden and purple strong tea, it is naturally unique and interesting. Steel chopsticks are not only used to cut charcoal and pick up the fire, but also keep the owner's hands clean.
