Wash and slice the old tofu first. Then cut the ginger into thin slices and wipe the bottom of the pot with ginger slices. This step is a wonderful way to make tofu stick to the pot. Then heat the pot with fire. Make sure it is hot. You can pour the oil into the pot after heating. You can also put more oil in the pot to better prevent tofu from sticking to the pot.
When the oil surface is a little smoky, you can put tofu in the pot. Don't rush after the tofu is put in the pot. After the tofu is slightly shaped, pick up the pot and gently shake it, so that the tofu is heated more evenly. Don't turn it around with a spatula. After the tofu is fried, turn it over. This way, the fried tofu will never break.
Control the temperature when frying. You can use medium fire. Don't start a big fire or a small fire. Tofu is easily burnt by fire. A small fire will prolong the cooking time. This way, tofu will fry and taste worse. So using medium fire is the best choice.
