What are the remedies if the noodles don't rise
If the noodles don't rise, try the following remedies: checking the yeast, adjusting the temperature, checking the dough, and adding baking powder.
Checking the yeast: Make sure you are using the right kind of yeast and that the yeast is not expired. You can use less yeast powder with good activity, and more yeast powder with less activity.
Adjusting the temperature: In the cold winter months, when the temperature is low, the dough will not rise easily. In this case, you can put a small glass of white wine in the center of the steamer so that the dough will also rise again. If you don't have a steamer, you can also put some salt and sugar on the dough, knead it repeatedly and cover it with a damp cloth for about 15 minutes. Also note that the dough should be placed in an environment between 25 and 30 degrees Celsius so that it can rise quickly.
Checking the dough: If the dough doesn't rise well, you can try to make a 2-3 cm square pit on the surface with your hands, put some white wine inside, and cover it with a clean wet cloth (about half an hour), so that the dough can rise well again.
