Preservation of fresh shiitake mushrooms
Fresh shiitake mushrooms can be stored naturally for 5 to 7 days after picking at 30℃ or below, but since fresh shiitake mushrooms need to go through 2 to 4 intermediaries to change hands when they arrive at the market from the source, it will result in the damage to the fresh shiitake mushrooms, and the freshness period will be further shortened.
1. Short-term preservation methods
Fresh shiitake mushrooms should not be dipped in water, so as not to rot, umbrella down handle up in a plastic bag, tie a few ventilation holes, placed in the refrigerator, can be kept fresh for about a week. Fresh shiitake mushrooms can be kept at about 5℃ for about 15 days, but this freshness period will be shortened due to the fact that they have been damaged during transportation, so it is best to store them in the refrigerator for no more than a week, and the optimal period for consumption should be within 3 days.
2. Long-term preservation methods
For long-term preservation, you can directly put fresh mushrooms into a plastic bag, squeeze out the air, and put them into the freezer overnight; the next day, when you take them out, you will find that the mushrooms have already taken off the water, and only the surface retains the water and there are dense small droplets of water on the plastic bag. At this point, take out the mushrooms, use a piece of paper to absorb the moisture on the surface of the mushrooms, put them into another clean plastic bag, and put them back into the refrigerator for freezing. After this process, the fresh shiitake mushrooms will become freeze-dried shiitake mushrooms that can be cooked directly.
Note: If you find that the mushrooms have a lot of moisture (the umbrellas are black in color), don't rush to put the mushrooms into the refrigerator to save them, spread out the mushrooms and place them on the cool floor to dry out for a few hours, and put them into the refrigerator to save them after the umbrellas have turned gray in color or appeared to be dry; anytime you find that the umbrellas of the mushrooms are blackened you should discard them, the blackened mushrooms have already deteriorated, and the smell of the mushrooms has changed, and you should throw away the mushrooms if you find them blackened. If there are blackened mushrooms, they should be discarded in time, because they will be mixed together and affect the other mushrooms
