How to make spicy and sour potato shreds?
Ingredients: potatoes, salt, vinegar, soy sauce, garlic slices, minced green onions, dried chili peppers.

How to do it:

Step 1: Wash the purchased potatoes, peel them and cut them into shreds. Put them in a bowl and pour an appropriate amount of water to soak them for 1-2 hours. Change the water every 20 minutes or so and take them out. Chop green onion, wash garlic and dried chili and slice into pieces. Set aside

Step 2: Pour an appropriate amount of oil into the pot and heat it up, add minced onions, garlic slices and chili peppers and stir-fry until fragrant.

Step 3. Pour the shredded potatoes into the pot, stir-fry evenly and then add 3 tablespoons of mature vinegar, 1 tablespoons of soy sauce and 2 tablespoons of salt.

Tips:

1: To quickly soak the starch out of shredded potatoes, soak it in cold water and change the water frequently 3-4 times, or add a few drops of vinegar to the water and stir it with your hands for a few times to quickly remove the starch from the shredded potatoes. 2: Add a few slices of garlic into the fried potato shreds, and the fried potato shreds will be more delicious. 3: If you don’t have dried chili peppers at home, you can use chili sauce instead.
