The recipe for delicious winter melon and shrimp soup is as follows:
Ingredients: 200g winter melon, 10 fresh shrimps, 1g salt, 2 tsp cooking wine, appropriate amount of onion, ginger and garlic, toothpicks 2 pieces, a pair of scissors.
1. Clean the shrimp: First, use food scissors to cut off the shrimp head, then cut off the shrimp's claws, and finish in sequence.
2. Cut off the shrimp heads. Do not throw away the shrimp heads. Put them in a container for later use. Cut off all the shrimps.
3. Peel off the shrimp skin with the heads removed, pick out the shrimp threads with a toothpick, and finish in sequence.
4. Wash the peeled shrimps, use cooking wine, sprinkle with 1g of salt and marinate for 15 minutes.
5. Peel the winter melon, as shown in the picture.
6. Remove the flesh from the peeled winter melon.
7. Wash the winter melon, cut it into small pieces, and put it in a container for later use.
8. When the ingredients are ready, you can turn on the fire and prepare the soup.
9. Put a small amount of oil in the pot. When the oil temperature is 80%, add onion, ginger and garlic, and stir-fry the marinated shrimp heads.
10. When the shrimp heads turn red in color, add a spoonful of cooking wine and stir-fry over low heat. The cooking wine can remove the fishy smell of the shrimp.
11. Add a bowl and a half of water (the amount of water can be increased or decreased appropriately).
12. Remove the shrimp heads after 8 minutes.
13. Add the cut winter melon, bring to a boil over high heat and then reduce to low heat for 2 minutes. (The bear shape was made by my son with a grinding tool).
14. Add the marinated shrimps after 2 minutes (I left three unpeeled shrimps for modeling later).
15. After taking it out of the pot, put it into a soup bowl, with the tail of the shrimp with the skin facing up. My son will finish it in a while! Didn't have time to take photos of the food.
