Prospect of fructose application

Since the commercialization of fructose products in the sixties, with the continuous updating of the production technology and the extensive demand of the food industry, the growth rate of fructose products has reached an alarming degree.

At present, fructose has been widely used in developed countries in the production of foodstuffs, medicines and health products. The consumption of fructose syrup is also in the form of faster growth. Some developed countries in confectionery and beverages basically do not use sucrose and fructose. Such as Canadian law, all beverages must use fructose syrup.

The United States is the largest fructose (in the form of fructose glucose syrup as the main form) production and consumption of countries, fructose consumption has accounted for 40% of the total amount of sugar. 20 century 80's, U.S. beverages, food and desserts industry, sucrose raw materials have been completely replaced by fructose. By 1994, the United States annually consumed more than 200 million tons of sucrose carbonated beverages have all used F-55 fructose syrup. The two major beverage companies in the United States (Coca-Cola and PepsiCo), for example, in 1981, the two major beverage companies decided to use F-55 fructose syrup in locally produced beverages to replace 50 percent of sucrose, since 1984 has been completely changed to F-55 fructose syrup.

According to the International Organization for Standardization on sweeteners statistics: in the 20 years from 1975 to 1995, the world's production of fructose syrup from 700,000 tons soared to 10.1 million tons, accounting for the world's consumption of sugar from 1 percent to 8.8 percent, accounting for the 20 percent increase in sugar and high-fructose corn syrup consumption during the 20-year period.

At present, 30 countries and regions around the world have established fructose syrup industries, with a total production of more than 18 million tons.

The United States is the largest producer of fructose products. 1995 production reached 7.08 million tons, accounting for more than 70% of the world's total production (by dry weight). 1996 production reached 7.39 million tons in 2003 further increased to 12 million tons. Crystallized fructose production also developed from a few thousand tons in 1981 to about 500,000 tons in 1996.

Japan in 1996, the production capacity of fructose syrup has reached 1.46 million tons, the production and import of crystallized fructose in more than 40,000 tons. Fructose products accounted for 17. 5 % of the total sugar consumption

Canada's fructose products production ranked third in 1996 production of more than 260,000 tons.

China has a huge potential market for fructose consumption. China's current annual output of carbonated beverages more than 700 million tons, fruit juice drinks more than 600 million tons, more than 1 million tons of wine, candy 800,000 tons, more than 1 million tons of cookies, more than 1 million tons of pastries, other baked goods 600,000 tons, more than 1 million tons of pastries, which are fructose products, the consumer market.

China's fructose research and production started late, is still in the primary stage. early 90's, China began to produce fructose syrup, in 1998 the output of 30,000 tons, in 2003 increased to 100,000 tons. So far our country can not carry out large-scale production of crystallized fructose.

China's application of fructose is still very uncommon, China's current annual consumption of fructose syrup is less than 100,000 tons, the consumption of crystalline fructose is very small. Compared with the United States per capita annual consumption of fructose products for 42kg, China is only 0.2-0.4kg, a difference of 100-200 times.

The reasons for this gap are manifold. Mainly in China's food industry, many manufacturers of fructose characteristics, physiological function of insufficient understanding, especially on the crystallization of fructose know little. In the application of fructose syrup in the process of transportation, storage, processing difficulties, the quality of domestic fructose syrup, stability is also unsatisfactory, some manufacturers therefore have a misunderstanding of fructose, and not willing to use fructose. Some manufacturers are overly concerned about the price factor, that the use of crystallized fructose cost is too high, while ignoring the crystallized fructose brought about by the improvement of product performance and grade. I believe that with the gradual deepening of the customer's understanding of the characteristics of fructose, the application of fructose will gradually develop.

In fact, many leading enterprises in China's food industry, has recognized the performance advantages of fructose products, began to take the lead in using. Like China's famous international beverage Jianlibao in 1997, began to use fructose syrup in large quantities. Many companies have used crystallized fructose in exported food products.

Pharmaceutical industry is another big market, the demand for crystallized fructose will continue to expand.

The use of fructose injection in foreign countries is about ten years earlier than in China. As a new generation of insulin-independent high-energy nutritional infusion, fructose injection has been very active in the world pharmaceutical market, and has become the second most popular injection after glucose in some countries.

In China, fructose injection has not been used in large quantities. However, the results of various clinical trials are satisfactory, physicians generally reflect good, willing to apply in large quantities in the clinic. Various pharmaceutical manufacturers are also actively declaring new drugs and planning for production. It can be predicted that the amount of fructose in the domestic pharmaceutical field will grow rapidly.

In short, China's large-scale application of fructose products is ripe, the development of fructose products in China has a broad prospect. It is expected that by 2010, China's consumption of fructose syrup can reach the scale of 2 million tons, the consumption of crystalline fructose can reach more than 10,000 tons. Fructose also has some shortcomings, in the application of this to have enough attention.

1) the cost is higher than sucrose

The cost of fructose syrup is currently higher than sucrose.

And crystallized fructose, due to the complexity of the production process, high technical requirements, only a few countries in the world can produce, the cost is higher.

But the cost of fructose and most sugar alcohols, oligosaccharides are comparable. It can be predicted that with the further improvement of fructose production, production technology progress, the cost of fructose will continue to reduce.

2) Fructose intolerance

Fructose intolerance is a genetic disease, this disease because of the lack of B-type aldolase, eating fructose will also cause the accumulation of 1-phosphofructose, a large number of depletion of phosphate reserves in the liver, which in turn decreases the concentration of ATP, which accelerates lactic glycolysis, resulting in lactic acidosis and postprandial hypoglycemia. This condition often manifests itself as self-limiting, i.e., fructose intolerance quickly develops into a strong aversion to any sweet food.

3) Need to control the amount

Fructose intake should not be too large. The daily fructose intake threshold for healthy people is 30 to 80 g (average 40 g), excessive intake, especially one-time excessive intake, will lead to fructose malabsorption, causing gastrointestinal reactions.

In addition, fructose metabolism and absorption of fast, and glucose can be converted to synthesize triglycerides, excessive intake will also lead to obesity, high blood cholesterol.
