Outer skin: 50g glutinous rice flour, 55g corn starch 15g milk, 30g coffee liquid, 20g white sugar, and 0/2g butter/kloc-0.
Coffee custard: 50g milk, 35g whipped cream, 25g coffee liquid, 8g white sugar and 3g gelatin tablets.
Coffee cream: light cream 150g, white sugar 12g, and coffee liquid 4g.
Production steps:
