So today I will share with you the practice of "fried potato wipe". In order to increase the taste and nutrition, I also added corn flour. Golden potatoes have a faint luster, and a bite has both the fragrance of potatoes and the taste and chewiness of French fries. Let's have a look!
[Clean fried potatoes]
Materials: potato 1 (peeled 290g), flour 1 15g,
Accessories: corn flour 30g, pepper powder 2g,
Seasoning: salt, chopped green onion and edible oil 1g each.
Specific practices
(1) Prepare a potato, wash and peel it, and knead it into thick shredded potatoes. If not, you can also cut it with a knife. But try to cut it evenly, so that you can better wrap the flour.
(2) Wash the kneaded shredded potatoes twice with clear water, wash off the starch inside, soak for 5 minutes, take them out, and control the water to dry for later use.
Tip: Because potatoes contain a lot of starch, if the starch is not cleaned, it will affect the taste, and it is easy to stick to the pot when cooking.
(3) Put the dried potato shreds into a pot, add 1 15g flour and 2g pepper powder, and stir evenly, so that each potato shred is evenly coated with flour.
Tip: If the shredded potatoes are not dried, they will stick together with flour. Be sure to dry it!
(4) Finally, add 30 grams of corn flour, stir evenly by hand, and shake the adhered shredded potatoes.
Tip: The ratio of potato to flour is 2: 1. Adding corn flour can increase the intake of coarse grains, enrich the taste and increase nutrition.
(5) Next, prepare to dry and smooth the potatoes, add a proper amount of water to the pot, put a steamer on it, spread a steamer cloth on it, spread the potatoes on it, turn on the fire and steam for 10- 15 minutes.
(6) Wipe the steamed potatoes, shake them out and let them cool, otherwise they will stick to the pot. Next, cut some onions for later use.
(7) Clean the dried potatoes and put them into the basin. Pay attention to some crumbs at the bottom to avoid pasting the bottom when frying.
(8) Pour oil in a hot pan (potatoes are washed and eaten with oil, which makes the oil taste good), then add chopped green onion and stir fry, add potatoes, wash and stir fry until the potatoes are dry, add 1g salt to taste, and stir fry evenly.
Stir-fried potatoes can be matched with side dishes according to their own tastes, such as eggs and vegetables, and a proper amount of Chili noodles can be added, which is another taste.
