How to pickle toon:
When pickling toon sprouts at home, strive to achieve: one moderate, two no, three essence, that is, moderate rubbing; dry the sprouts without moisture before pickling , the pickling process is pollution-free; the sprouts are carefully selected and refined salt is used. Pay special attention to cleanliness and hygiene to ensure that the pickled toona buds do not deteriorate all year round and maintain their natural flavor.
1. Pickling + Freezing
Put the toon pickled in salt in the freezer. Not only will it not freeze (the freezing point of salt solution is lower than that of water), but it can also be stored for a long time. Time, the color remains green. The method is as follows:
1) Wash the toona and dry the surface moisture. This step must be done thoroughly to allow the toon to lose a little water.
2) Sprinkle appropriate amount of salt and marinate for 3 to 4 hours until the Chinese toon turns dark green. Don’t use too much salt. Too much salt will make it become a pickle. Scrambled eggs will be too salty. Don't make it too little, otherwise the toon will freeze (it doesn't matter if it's slightly frozen).
3) Put the pickled toon in a food bag, tie it and put it in the freezer of the refrigerator. The food bag must be tightly tied, otherwise it will mix with other food in the refrigerator.
It is best to eat pickled toon after a week, because vegetables that are not pickled contain more nitrite (a carcinogen).
2. Blanch + Freeze
After blanching the Chinese toon, put it in a fresh-keeping bag and freeze it. You can eat it as you go, so you can eat it until winter. In order to reduce the nitrite content of toon itself, it must be blanched in boiling water before eating, because on average each kilogram of toon contains more than 30 mg of nitrite, but after blanching in boiling water it is only 4.4 mg per kilogram.
